In this correspondent’s personal opinion, Osteria Italian Seafood (1211 Herr Lane) has become a Louisville institution in a remarkably short period of time, offering a bounty of knockout seafood dishes, pastas and salads inspired by Italy’s coastal regions, alongside appropriate libations and impeccable hospitality.

Today Osteria announces an important team transition as Henry Wesley III joins the restaurant as executive chef, bringing with him Erik Abraham as chef de cuisine.

Wesley first came to Louisville in 2008 to pursue a degree in psychology, serendipitously becoming smitten with restaurant work. Over a decade’s toil, he worked his way up to an executive chef position at The Village Anchor in 2017.

In all, Wesley’s local stops have included Rivery City Winery, Z’s Oyster Bar, Jeff Ruby’s Steakhouse, The Village Anchor, 8UP Elevated Drinkery and Kitchen and Le Moo Steakhouse. In 2025 he opened Hotel Bourre Bonne in downtown Louisville.

For his part, Abraham’s lengthy work history includes 15 years at Vincenzo’s.

Louisville, KY — Something exciting is simmering at Osteria Italian Seafood.

Fresh seafood. Handmade pastas. Crisp seasonal salads. Coastal Italian flavors. Wine dinners. Chef-inspired distillery showcase dinners. And now, the return of one of Louisville’s most respected chefs.

Osteria Italian Seafood proudly announces the addition of Executive Chef Henry Wesley III and Chef de Cuisine Erik Abraham, two accomplished culinary leaders bringing decades of experience, creativity and passion to one of Louisville’s emerging restaurant destinations.

For Chef Henry, the move marks something many local food lovers and restaurant insiders have been waiting for — a return to Louisville’s local restaurant scene after years building an impressive culinary career primarily within the hotel world.

“We are incredibly excited to welcome Executive Chef Henry Wesley and Chef de Cuisine Erik Abraham to the Osteria family,” said Jared Matthews, owner of Osteria Italian Seafood. “After spending a great deal of time getting to know both of these talented chefs, it became clear that their culinary vision aligns perfectly with ours.”

Together, Chef Henry and Chef Erik bring more than five decades of culinary experience to Osteria’s kitchen, with a focus centered around fresh seafood, handmade pastas, seasonal salads, classical techniques and innovative menu development designed to elevate the guest experience while remaining rooted in authentic Italian tradition.

Chef Erik Abraham arrives with 27 years of professional culinary experience, including 15 years helping shape kitchens and menus at Vincenzo’s. Known for his creativity, leadership, calm demeanor and deep appreciation for Italian, French and farm-to-table cooking, Chef Erik is already helping shape new menu concepts while leading kitchen systems, team development and culinary execution.

“What truly excites us is what Henry and Erik can create together,” Matthews added. “We believe Louisville deserves a truly exceptional coastal Italian dining experience and with them leading our culinary team, we’re confident the best is yet to come.”

For Chef Henry, the opportunity represents both a return home to local restaurants and an opportunity to create something new.

“I’m very excited to be joining the Osteria team and look forward to serving the Louisville community again with a local restaurant group,” he said.

“My goal is to elevate the current menu with fresh ingredients, creative ideas and flavor profiles inspired by the Italian coastline.
